Ingredients

2 large eggs 

1 medium avocado 

Salt and pepper for seasoning  

Additional extras: chilli flakes, chopped chives, tomatoes 

Method

  1. Preheat oven to 200 degrees Celsius. 
  2. Cut the avocado in half. Remove the seed and with a spoon, scoop a little of the flesh out to make the hole larger.  
  3. Crack one eggs in each avocado hole.  
  4. Season with a pinch of freshly ground salt and pepper. 
  5. Place on a baking tray and bake for 10-15 minutes or until egg is cooked to your liking.
