
Mediterranean Breakfast Bowl
Ingredients
4 large eggs, poached or boiled
2 tsp extra virgin olive oil
1 tbsp. balsamic vinegar
1 cup button mushrooms, halved (or quartered if large)
1 cup cherry tomatoes
2 cups baby spinach leaves
1 large clove garlic, crushed
4 Tbsp hummus
Salt and pepper for seasoning
Method
- Cook eggs to your liking. Cover and set aside.
- Heat tsp olive oil in a non-stick pan. Add mushrooms and a pinch of salt and pepper. Cook until browned. Add balsamic vinegar and sauté for another minute to caramalise the mushrooms.
- Next add 1 tsp olive oil, cherry tomatoes, spinach and garlic. Sauté for a few minutes. Spinach will wilt.
- Add veggie mixture evenly to two bowls. Top with 2 eggs each and drizzle each with 2 tbsp hummus.
